Healthy Food Innovation: Prof Puspita Sari Officially Becomes UNEJ Professor

University of Jember (UNEJ) On 15 February 2025, UNEJ officially inaugurated Prof. Dr. Puspita Sari, S.TP., M.Phil., as a Professor in Food Science and Technology. This inauguration is an important moment for Prof Puspita Sari and also for the development of science in the Faculty of Agricultural Technology (FTP) in particular and the University of Jember in general.
Prof Puspita Sari is known as a dedicated academic in functional food research. She has long devoted herself to developing science and technology in the field of food, especially those related to functional food. Her expertise in combining food chemistry and food technology has resulted in various innovative researches that make significant contributions to society.
One of Prof Puspita Sari's main research focuses is on anthocyanins. Anthocyanins are natural pigments found in red, purple, and blue coloured fruits and vegetables. This pigment has great potential as a natural colourant as well as providing tremendous health benefits. Prof Puspita Sari has conducted in-depth research on anthocyanins, including how to extract and optimally utilise them in various food products.
The inauguration of Prof Puspita Sari as Professor is not only a pride for herself, but also for FTP UNEJ. Her presence as Professor is expected to further improve the quality of education and research at UNEJ, especially in the field of Food Science and Technology. In addition, the research that has been and will be conducted by Prof Puspita Sari is also expected to make a real contribution to society in terms of providing healthy and quality food.
The entire academic community of the Faculty of Agricultural Technology UNEJ congratulates Prof. Dr Puspita Sari, S.TP., M.Phil., on her inauguration as Professor.
